Cardiff’s award-winning Pettigrew Bakeries has unveiled its latest pastry creation: a glazed pistachio croissant that is already generating excitement among customers.

The indulgent pastry begins with a buttery croissant finished with a light sugar glaze. It is then sliced and generously filled with a pistachio crème diplomat before being coated in a pistachio and shortbread crumb, adding extra bite, texture and richness. Built on Pettigrew’s signature lamination and patisserie craft, the new pastry offers a decadent twist on the bakery’s already popular croissant range.

The pistachio croissant launched in January, and is available seven days a week across all Pettigrew Bakeries locations, as well as at Cardiff Farmers Markets. It is also available through the bakery’s online shop.

Founded by David Le Masurier, Pettigrew Bakeries has become one of Cardiff’s best-known craft bakeries, celebrated for its slow-fermented sourdough breads made using organic flour over a 72-hour process alongside a rotating calendar of limited-edition pastries that frequently gain attention on social media.

The business now operates four sites across the city: the original Canton bakery opposite Victoria Park, the Moy Road site in Roath, and two retail bakery cafés in Rhiwbina Village and Castle Arcade in the city centre.

Pettigrew Bakeries was recently named Craft Bakery Business of the Year at the UK Baking Industry Awards 2024, highlighting the strength of Cardiff’s growing craft bakery scene. With the arrival of the pistachio croissant, the team hopes to give customers a little indulgence to brighten the winter months.
